Ingredients:
1-2 oz dried shiitake mushrooms (before soaking)
1 tablespoon of cooking oil
1 inches fresh ginger, peeled and sliced
2 cups of Pork Stock
1 tablespoon of cooking wine
1 tablespoon of sugar
Directions:
Put the shiitake mushrooms in a bowl and soak in plenty of boiling water for at least half an hour, until softened. Squeeze the water out.
Heat the cooking oil and add the ginger and stir fry until fragrant (one minute).
Add the mushroom and continue to stir fry for a minute.
Add the Pork Stock , cooking wine, salt and sugar. Bring to a boil and then turn down the heat and simmer for 30 minutes.
Increase the heat to high to reduce the broth.
When it has reduced to a little more than a glaze, turn off the heat and stir in sesame oil.
Leave it to cool and serve.
