Juicy Steamed Eggplant

Asian eggplants are absolutely delicious. Their texture is buttery soft. Garlic, chilies and scallions enhance the taste of eggplants. Sprinkle them all over the eggplants with drizzles of soy sauce for a very attractive and delightful dish.

Ingredients:

3 Asian eggplants, about 1 pound

1/2 teaspoon of salt

1 scallion

2 fresh red chilies

2 tablespoon of light soy sauce

Directions:

IMG_1505Trim the ends from the eggplant and cut into halves lengthwise. Sprinkle with salt.

Add the eggplants to a steamer. Cover the steamer and let it cook until the eggplants are soft in about 8 minutes.

Meanwhile, mince the garlic, chop the chilies and scallions.

Sprinkle the garlic, chilies and scallions followed by drizzles of soy sauce and serve.
