Shanghai style of cooking a whole fish. Fish is crispy fried and braised in fragrant shaoxing wine and savory soy ginger marinade.The dish produces a beautiful mahogany color that is also very delicious.
Ingredients:
2 yellow croakers
1 tablespoon of light soy sauce
1/2 teaspoon of sugar
1 inch ginger (minced)
2 tablespoons of cooking oil
2 scallions
2 teaspoons of shaoxing wine
1/4 teaspoon of sesame oil
Directions:
Use a sharp knife and make 3 cuts on each side. Combine soy sauce, sugar, ginger, add fish, and marinade for 15 minutes. Pat fish dry with paper towels and set the marinade aside.
Heat cooking oil in skillet over medium high heat, add fish, and fry over medium heat for 5 minutes.
Very carefully, flip over the fish and fry for another 5 minutes over medium heat.
Add scallions, add wine, and the marinade. Bring it to a boil, reduce to low heat and simmer for 3 minutes on each side of the fish. Plate and serve immediately.
