Three Cup Chicken

A quintessential Taiwanese dish. The “cups” in this recipe’s name means that the equal parts of soy sauce, rice wine, and sesame oil are used for making this dish. It’s a rich, savory, and salty chicken dish with these ingredients alone. The garlic, ginger, and scallions add the fragrant aroma to the dish.

Ingredients:

1 1/2 pound of chicken (cut into small pieces)

1/2 cup of sesame oil

1/2 cup of light soy sauce

1/2 cup of rice wine

6 garlic cloves (sliced)

1 piece of ginger (sliced)

1 teaspoon of sugar

4 whole scallions (trimmed and cut into 1 inch pieces)

Heat the sesame oil in a large skillet over medium high heat. Add ginger, garlic, and scallions. Cook until fragrant for about 1 minute.

Add the chicken pieces and stirring occasionally, about 6 minutes.

Add rice wine, soy sauce and bring it t a boil. Reduce heat to simmer and cook, uncovered, until the chicken pieces are cooked through and the broth has reduced about 15 minutes.  Stir in sugar, stir for about one minutes.

Plate and serve immediately.
