Yu Choy with Sesame, Garlic, Soy Sauce

Want to eat healthy but not a fan of kale? No worries. It’s not the end of the world. Try Yu Choy, a Chinese leafy green vegetable that is tender and sweet tasting. This is one of the easiest recipe for preparing vegetables. It takes less than 15 minutes to make this dish. Other Chinese vegetables like Chinese broccoli (Gai Lan) and Choy Sum can be prepared using the same method.

Ingredients:

1 pound of Yu Choy

2 teaspoons of vegetable oil

2 teaspoons of light soy sauce

1 teaspoon of sesame oil

2 garlic cloves, minced

Wash and drain Yu Choy thoroughly. Trim 1 inch off the end of the stalks. Bring a large pot of water to boil. Add Yu Choy to the boiling water. Quickly remove after 2 minutes. Set side and prepare the sauce.

Add vegetable oil, sesame oil, soy sauce, and minced garlic in a small bowl. Microwave for one minute. Pour sauce over the vegetables.

Serve immediately.
