Kimchi Fried Rice

This is a simple yet very satisfying dish. For midnight hunger, many people may prefer ramen but I like kimchi fried rice. I also like to add a fried egg over easy style with a runny yolk for extra yum.

Asparagus with Garlic

Tender with a little bit of crunch, asparagus is one of my favorite vegetables. The good news is this special vegetable is in season right now.  Fresh asparagus will be bright green with no signs of shriveling.  Here is a simple recipe and takes under 10 minutes.

Squid with Ginger, Garlic, Parsley

Extremely fragrant, delicate tasting, and quick to cook. Squid with Ginger, Garlic, Parsley is one tasty dish. Be sure to have all your ingredients prepped and ready to toss into skillet nearby, as squid only takes a few moments to cook through. The texture of the squid will become too chewy if cooked for too long.

Tteokbokki (Spicy Korean Rice Cake)

Spicy, savory, and chewy. Tteokbokki is a beloved Korean dish and has many variations. I am going to show you most basic version (but does not mean most plain tasting). You can add fish cakes, boiled eggs, or even ramen to make this dish a bit more interesting.

Ingredient:

3 pounds of rice cakes

9 cups of anchovy broth

3 tablespoons of Korean red chili pepper paste (gochujang)

1 tablespoon of light soy sauce

1 tablespoon of sugar

1 teaspoon of sesame oil

Directions:

IMG_3984

Soak rice cakes in water for about 10 minutes.

IMG_3990

For the broth, simmer dried anchovies over medium heat in a large pot of boiling water for 10 minutes and then remove the anchovies.

IMG_3997

Add red chili pepper paste, soy sauce, and sugar.

IMG_4002

Add the rice cakes.  Boil until the rice cakes become very soft and the sauce is thickened, about 8 – 10 minutes. Stir frequently so the rice cakes don’t stick to the bottom of the pan. Stir in sesame oil and ready to serve.

Buttery, garlicky with a bit of spice. I use freshwater shrimp for this recipe but you can also use saltwater shrimp for a richer flavor. It takes about 15 minutes to make. Easy and delicious. Let’s get started.

Mapo Tofu

Spicy, pungent, and salty. This recipe requires the use of chili bean sauce and the fermented black bean sauce. Both can be purchased in your local Asian supermarket. The chili bean sauce– a signature seasoning of Sichuan province brings together the fermented beans and chilies in a pungent, paste mixture. Fermented black beans are soy beans that have been fermented and produce a bold salty flavor. The combination of two sauces help create this delicious classic Sichuan dish.

Ingredients:

1 package of firm tofu (cut into cubes)

1/4 pound of ground pork

1 teaspoon of salt

1 tablespoon of cooking oil

1 teaspoon of fermented black beans

1 tablespoon of chili bean sauce

1 teaspoon of ginger (chopped)

1 teaspoon of garlic (chopped)

2 teaspoons of light soy sauce

1 teaspoon of sesame oil

2 scallions

Directions:

IMG_2429

Soak tofu in a bowl of hot water and set aside for 5 minutes. Drain.

IMG_2439

Heat cooking oil in skillet over medium high heat. Add ground pork and stir until cooked about 2 to 3 minutes.

IMG_2446.JPGAdd ginger, garlic, black bean, chili bean and 1 cup of water.

IMG_2448

Let it boil and add tofu. Stir in soy sauce and salt. Bring it to a boil for about 2 minutes. Add sesame oil and sprinkle on scallions. Plate and serve with rice.
